Salsa Chicken. It’s the best. I make it all the time. I enjoy it.
-One boneless chicken
-2 T of Olive Oil
-1 clove of garlic
-pinch of lemon pepper
-1/2 to 3/4 cup of salsa
-1 package of tortillas
– Cut the chicken into cubes, then set them aside.
-In a pan, saute 1/2 onion, 1 clove of garlic and 2 T of olive oil
-Once the onion has pearlize, add in the chicken, a pinch of lemon pepper.
-Cook until chicken browns.
– Once the chicken browns, add the salsa. Turn the heat down to medium and allow the salsa to soak into the chicken.
In a cooking pot:
-cook the rice at the same time
Heat tortillas in a microwave or fry them in a pan.
This is amazing. It is so nummy. Easy good and heats up well.
